This festive salad is a blend of mixed greens, oranges, pomegranate, feta cheese and candied pecans, all tossed in a homemade dressing. An easy and festive salad that is the perfect addition to any menu! If you don’t want the added sweetness of the candied pecans, you can always use plain pecans which I would recommend if you are trying to manage neuropathy.

FOR THE SALAD
- ▢ 7 cups mixed spring greens
- ▢ 1 1/4 cups orange segments mandarin oranges, clementines or tangerines
- ▢ 1/2 cup pomegranate seeds can substitute dried cranberries
- ▢ 1/2 cup feta cheese crumbled
- ▢ 1/2 cup candied pecans roughly chopped
FOR THE DRESSING
- ▢ 1/3 cup olive oil
- ▢ 1 tablespoon honey
- ▢ 2 teaspoons Dijon mustard
- ▢ 2 tablespoons apple cider vinegar
- ▢ 1 tablespoon shallot minced
- ▢ salt and pepper to taste
INSTRUCTIONS
- Place the mixed greens, oranges, pomegranate seeds, feta cheese and pecans in a large bowl.
- Place all the dressing ingredients in a small bowl, whisk until smooth.
- Drizzle the dressing over the salad mixture to taste, then gently toss to coat. You may have dressing left over. Serve immediately.
SALAD FLAVOR VARIATIONS
This salad is fabulous as-is, but you can add other ingredients to make it your own.
- Fruit: Instead of oranges, try another cold weather fruit such as apples, pears or persimmons.
- Nuts: While I think the pecans go well with the flavors in the salad, other options include almonds, walnuts or even cashews. You can choose roasted or candied nuts, but I feel the candied nuts add a nice crunch and sweetness.
- Cheese: Swap out the feta for blue cheese, shaved parmesan, ricotta salata or small mozzarella balls.
- Add-Ins: Feel free to add other ingredients such as shaved fennel, red onions, avocado or dried cranberries.
Candied Pecans
This recipe for candied pecans is pecan halves coated in a sweet cinnamon sugar mixture and baked to crispy and crunchy perfection. Candied pecans are perfect for salads, snacking or package them up for a fun homemade gift idea!
Ingredients:
¼ cup granulated sugar
¼ cup packed light brown sugar
½ teaspoon cinnamon
½ teaspoon salt
1 egg white
1 teaspoon water
8 ounces pecan halves
Instructions:
1. Preheat the oven to 300 degrees. Line a sheet paan with a silicon baking mat or parchment paper.
2. Place the granulated sugar, brown sugar, cinnamon and salt in a small bowl. Mix until thoroughly combined.
3. In a large bowl, whisk the egg white with the water until the mixture is frothy. Pour the pecans into the egg white mixture and toss to coat. Pour in the cinnamon sugar mixture and stir until nuts are thoroughly coated in the sugar.
4. Place the nuts in a single layer on the sheet pan.
5. Bake for 30-35 minutes, stirring halfway through the baking time, until the coating on the nuts has hardened.
6. Cool completely and store in an airtight container until ready for use.
