Bake until tomatoes are softened and cheese is almost melted, 15 minutes. Spread on toasted whole grain baguette slices. Makes 16 crostini.

 

Feta-Cucumber Kabobs

 

Cut one 10-oz. cucumber into ¾ -inch chunks. Cut one 8-oz. block feta (tomato-basil flavor or plain) into ¾-inch squares. Thread cucumber, feta, and pitted Kalamata olives onto 4- to 6-inch skewers. Sprinkle with 2 tsp. dried Greek seasoning and drizzle with olive oil. Makes 20 skewers.
