Ingredients:

2 teaspoons Extra Virgin Olive Oil

1 small onion, chopped

1 red bell pepper, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon kosher salt

¼ teaspoon red pepper flakes

¼ teaspoon black pepper

2 cups fresh baby spinach

1 ¼ lbs. shrimp, peeled and deveined (if using frozen shrimp be sure to fully thaw)
For serving:

Crumbled feta cheese

Chopped black olives

Steamed couscous (or rice, orzo, or crusty bread)
Instructions:

Heat olive oil in a large skillet over medium heat.

Add onion and pepper and saute for 5-7 minutes, until tender.

Add garlic and seasonings and saute for an additional 30 seconds.

Add spinach to the pan and stir until slightly wilted, about 2 minutes.
