Aside from eggs being a delicious and healthy breakfast dish that will benefit your neuropathy, new studies show that breakfast is more important than we realize to help prevent dementia. With that in mind I am planning to add some nice mediterranean breakfast recipes to help keep you healthy over the long term.

 

Eggs benefit neuropathy by providing essential nutrients like Vitamin B12, crucial for nerve protection and myelin repair, and Choline, vital for nervous system structure, helping to combat deficiencies that worsen nerve pain and weakness, though moderation is key as some sources suggest excessive dairy (which includes eggs) might be problematic for some, so a balanced diet with plenty of fruits and veggies is also important. 

Key Nutrients in Eggs for Neuropathy

  • Vitamin B12: Deficiency is strongly linked to neuropathy; eggs are a good source for nerve function and myelin, the nerve's protective coating.
  • Choline: Supports overall nervous system health, including brain and spinal cord structure, with eggs offering a significant amount.
  • Vitamin D: Eggs also contain Vitamin D, which, when deficient, can contribute to neuropathy development and worsening symptoms. 

How They Help

  • Supports Nerve Health: B vitamins, particularly B12, are essential for nerve signal transmission, and deficiencies can cause numbness and weakness.
  • Reduces Symptoms: Adequate intake of these nutrients can help manage symptoms like tingling, numbness, and balance issues.

Red bell peppers benefit neuropathy through capsaicin, their active compound, which initially overstimulates pain nerves (TRPV1 receptors) leading to desensitization and nerve degeneration, ultimately blocking chronic pain signals for conditions like diabetic neuropathy, with effects potentially lasting as nerves regenerate, though high-dose topical application is key for therapeutic relief. 

How Capsaicin Works for Neuropathy:

Nerve Activation & Desensitization: Capsaicin binds to TRPV1 receptors on sensory neurons, causing a rush of calcium, which initially activates pain signals. Repeated exposure then leads to the desensitization and temporary "defunctionalization" of these pain-sensing (nociceptive) neurons.

Goat cheese may benefit neuropathy by providing anti-inflammatory compounds, probiotics, and easier digestibility due to its A2 casein, potentially reducing systemic inflammation linked to nerve damage, and its antioxidants like selenium can protect against cellular damage, but it's not a cure, and moderation is key due to sodium and saturated fat content. 

How Goat Cheese May Help Neuropathy:

  • Anti-inflammatory Properties: Goat cheese contains fatty acids and proteins (like whey proteins) with anti-inflammatory effects, which can help combat the inflammation that often exacerbates neuropathy symptoms, notes www.ncbi.nlm.nih.gov.

  • Antioxidants: It's a source of selenium, an essential mineral that acts as an antioxidant, protecting cells from damage, notes www.webmd.com. 

 

Spinach and Pepper Mini Frittatas Ingredients:

1 Tbsp olive oil

1 large red bell pepper, cut into ¼-in. pieces

Kosher salt and pepper

2 scallions, chopped

3 large eggs plus 3 large egg whites

½ cup 1% milk

1 5-oz. pkg. baby spinach, chopped

3 Tbsp fresh goat cheese, crumbled

 

Spinach and Pepper Mini Frittatas Instructions:

1.     Heat oven to 350 degrees F. Spray 12-cup muffin pan with non-stick cooking spray (I prefer olive oil spray.)

2.     Heat oil in large skillet on medium. Add red pepper and 1/8 tsp each salt and papper and cook, covered, stirring occasionally, until tender, 6 to 8 min. Remove from heat and stir in scallions.

3.     In large bowl, beat together eggs, egg whites, milk, and 1/8 tsp each salt and pepper. Stir in spinach and red pepper mixture.

4.     Divide batter among muffin pan cups (about ¼ cup each), top with goat cheese and bake until just set in center, 20 to 25 min. (Even when set, tops of frittatas may look wet from the spinach.)

5.     Cool on wire rack 5 min. then remove from pan. Serve warm. Can be refrigerated up to 4 days.
